5:2 Diet Recipe: Vegetarian Broccoli and Stilton Stuffed Mushrooms for my Nanny

Broccoli and Stilton, it's a match made in heaven. A soupy concoction will brighten up the dullest of days but Stilton certainly isn't standard fast day fodder. The thing is, I have loads of it in the fridge so any excuse to use it up is welcomed. A small amount of Stilton bulked out with some of the green stuff and low fat soft cheese helps to make this a 5:2 friendly meal.

It was my Nanny Margaret that was the root of this particular dish, she's staying with me this week and has been telling me all about some stuffed mushrooms she had in a restaurant recently. She really enjoyed them, so Nan, this recipe is dedicated to you.

They really are quick and simple, especially if you have a food processor to lighten the load.

5:2 Diet Recipe: Broccoli and Stilton Stuffed Mushrooms

Pop the following into the food processor and whizz into fine crumbs:

130g Broccoli (44)
50g White Onion (20)
20g Fresh Parsely (7)
1 clove of garlic (5)
Squeeze of Lemon Juice (2)

Mix in 50g Stilton (205) and 30g Light Soft Cheese (60) and the seasoning and divide over the top of four Portabello Mushrooms (88).

Spinkle over 20g bread crumbs and cook in the oven for 25 minutes at gas mark 6.
